Difference between black tea and green tea
Black tea and green tea come from the same plant, Camellia sinensis.
What makes black tea different from green tea is that during the production process, the tea leaves can completely oxidize before being heat-treated and dried. During oxidation, oxygen interacts with the cell walls of the tea plant to give the leaves their rich dark brown to black color. Oxidation also alters the aromatic profile of a black tea, helping to add malty, fruity and stronger notes than classic green tea.
In contrast, when green tea leaves are processed, they are minimally oxidized. After being harvested, they are quickly dried at low temperatures, precisely to prevent excessive oxidation from occurring which would cause the green leaves to turn brown and alter their freshly harvested flavour. Less oxidation means that green tea is typically lighter in color and flavor than black tea, with a more delicate, herbaceous flavor.
History of black tea
According to the most famous legend, in the 17th century, a ship coming from China and bound for England imported green tea. It was stored below the waterline and was suffering from the heat. Over the duration of the journey, the tea underwent oxidation, turning its leaves black. Far from stopping the English, they consumed it and preferred it to green tea for tea time.
