Shiitake (botanical name: Lentinula edodes ) grows on dead wood in the deciduous forests of Japan, China and Vietnam. It has been used as food for thousands of years and together with Ganoderma lucidum, Cordyceps sinensis and Maitake, it is still considered today one of the most important mushrooms of Chinese and Japanese tradition.
